Edamame (Japanese for green soybeans)
Whole edamame can be purchased frozen. Simply steam them for a few minutes on top of the stove, or in the microwave. Drain and sprinkle generously with Windsor® Coarse Kosher Salt. They make a delicious, nutritious snack or cocktail nibbler and can be enjoyed warm or cold. To eat, gently squeeze beans out of the pods. Don’t forget to have a bowl handy for the discarded edamame pods which are not edible.
Pepitas (Roasted Pumpkin Seeds)
These are a great alternative to high fat salty snacks. For the freshest results, buy raw pumpkin seeds. Place 2 cups (500 mL) of seeds in a large frypan or wok over medium-
high heat and stir constantly until very hot. Dissolve 1 tsp (5 mL) of Windsor® Coarse Kosher Salt in ¼ cup (50 mL) hot water; stir into pan. When most of the water has been absorbed but seeds are still moist, sprinkle with additional ½ tsp (2 mL) Windsor® Coarse Kosher Salt. Continue stirring until seeds are toasted and almost dry. Remove from heat to cool and thoroughly dry.
Pita or Tortilla Crisps
Lightly brush each side of flour tortillas or split pita breads with olive oil. Cut into small wedges. Place on baking sheet and sprinkle with Windsor® Coarse Kosher Salt and if desired, freshly ground Windsor® Black Peppercorns, paprika, chili powder, or other spices or herbs. Bake at 325°F (165°C) until toasted and crisp. Serve as a crunchy snack, or use as a dipper with your favourite dips.
Lime Salt
Try a pinch of Lime Salt on fresh watermelon, pineapple, or strawberries. Or, have on hand for sprinkling on grilled fish and seafood, and for an instant flavourful salt rim for cocktails. Combine ¼ cup (50 mL) Windsor® Coarse Kosher Salt with the finely grated rind and juice of 1 small lime. Let stand 30 minutes, then store in refrigerator for up to 1 week, until needed.
