875 mL (28-oz) can Italian plum tomatoes
1 cucumber, seeded, coarsely chopped
1 red pepper, coarsely chopped
3 green onions, sliced
375 mL (1-1/2 cups) tomato juice
60 mL (1/4 cup) red wine vinegar
60 mL (1/4 cup) olive oil
60 mL (1/4 cup) chopped fresh basil leaves
10 mL (2 tsp) Windsor Nature's Seasons® Seasoning Blend
Few drops of Tabasco sauce
PreparationCombine tomatoes, cucumber, red
pepper and green onions. Process to small chunks in food processor
or blender; do not over-process. Combine chopped vegetables and
remaining ingredients; mix until blended. Chill.
