German-Style Cured Pork Chops (Gepockelte)

Cooking Time: 1 hours
Servings: 1.8 - 2.7 kg(4-6lbs)


Loin or rib chops, 1.27 – 1.9 cm ( 1/2 to 3/4-inch) thick
15 mL (1 tbsp) Tender Quick® mix per pound of chops

Preparation
Rub Tender Quick mix thoroughly into pork chops. Place meat in plastic bag. Tie open end. Let cure in refrigerator for 1 to 2 hours. Before cooking, rinse chops under running water to remove excess salt.

Cooking
Brown chops in lightly greased skillet. Add 60 mL (1/4 cup) of water. Cover tightly and simmer until done, about 45 minutes to 1 hour.
