500 g (1 lb) orange roughy fillets (4, 125

(4oz ) fillets)
30 mL (2 tbsp) olive or vegetable oil
10 mL (2 tsp ) Windsor Nature's Seasons® Seasoning Blend
60 mL (1/4 cup) Salsa, divided
125 g (4 oz) crumbled feta cheese
300 g (10 oz) prewashed baby spinach leaves, remove stems and
coarsely chop
Preparation
Brush fish fillets with oil; sprinkle all
sides with Windsor Nature's Seasons Seasoning Blend. Cover and
refrigerate for 30 minutes. Spoon 60 mL (1/4 cup) Salsa over each
fillet.
Cooking
Bake at 350°F (175°C) for 20 minutes or until fish flakes
easily when tested with a fork; sprinkle with feta. Return to
oven for an additional 5 minutes to heat and soften cheese. Serve
fish over spinach with additional salsa. Serve immediately.
