30 mL (2 tbsp) olive oil
30 mL (2 tbsp) lemon juice
15 mL (1 tbsp) Worcestershire sauce
10 mL (2 tsp) Windsor Nature's Seasons® Seasoning Blend
5 mL (1 tsp) Dijon-style mustard
4 chicken quarters (remove skin if desired)
2 potatoes, pared, sliced
3 carrots, julienne cut
1 fresh lemon
Preparation
In a large bowl, combine olive oil, lemon
juice, Worcestershire sauce,Windsor Nature's Seasons Seasoning
Blend and mustard; add chicken. Layer potatoes and carrots in
a 13 x 9-inch pan. Remove chicken from marinade and place on potato/carrot
slices. Pour reserved marinade over chicken.
Cooking
Bake at 350°F (175†C) for 50 to 60 minutes. Remove from oven
and squeeze with fresh lemon.
