30 mL (2 tbsp) olive or vegetable oil
7.5 mL (1 1/2 tsp) Windsor Nature's Seasons® Seasoning Blend
4 boneless, skinless chicken breasts
2 L (8 cups) salad greens, washed and torn cherry tomatoes halved
walnut pieces,toasted
Salad Dressing:
75 mL (1/3 cup) olive oil
30 mL (2 tbsp) red wine vinegar
5 mL (1 tsp) Windsor Nature's Seasons
Seasoning Blend
Preparation
Preheat barbecue or grill. Combine oil
and seasoning blend; brush on chicken. Grill over medium-high
heat about 4 minutes per side, or until no longer pink inside.
Set aside. Meanwhile, divide salad greens among 4 large plates.
Whisk together dressing ingredients and drizzle over each plate.
Slice each chicken breast into thin slices. Transfer each on top
of the salads. Garnish with cherry tomatoes and walnuts.
