4 cups (1 L) penne pasta
1/3 cup (75 mL) snipped sundried tomatoes
1/3 cup (75 mL) dry white wine
2 tbsp (30 mL) olive oil
2 cloves garlic, minced
1 lb (500 g) mixed mushrooms
(white, cremini, shiitake)
1 tsp (5 mL) Windsor Nature’s Seasons
1 cup (250 mL) whipping cream
Shaved asiago or Parmesan cheese
Preparation
Cook pasta according to package directions. Combine sundried tomatoes and wine in microwaveable bowl. Microwave on HIGH 50-60 seconds. Let stand to soften tomatoes. In large skillet, heat oil over medium-high heat.
Cooking
Sauté garlic, mushrooms and Nature’s Seasons about 5 minutes. Add sundried tomato wine mixture; simmer until most of liquid is absorbed, about 2 minutes.
Add cream and simmer until slightly thickened. Drain pasta; place in serving bowl and top with sauce.
Garnish with shaved cheese.
